Dare we say it? These eggs are even more fun to decorate than the traditional version—and the result is so much more delicious! This simple recipe is designed to put equal emphasis on ease, deliciousness and creativity. Ease comes from using Betty Crocker™ sugar cookie mix and Betty Crocker™ Rich & Creamy vanilla frosting—and that’s where the perfect sweetness comes from, too. Creativity comes into play with all the patterns and colors you can dream up to decorate your cookie eggs—let your imagination run wild!

Ingredient List

  • Small check mark in a circle icon 1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
  • Small check mark in a circle icon Flour, butter and egg called for on cookie mix pouch for cutout cookies
  • Small check mark in a circle icon 1 1/2 cups Betty Crocker™ Rich & Creamy vanilla frosting (from 16-oz container)
  • Small check mark in a circle icon Pastel pink and yellow gel food colors
  • Small check mark in a circle icon Pink, purple and white cookie icing pouches (7 oz each), as desired
  • Small check mark in a circle icon Pastel-colored sprinkle mix, as desired
  • Small check mark in a circle icon Colored sugars, as desired

Preparation

  1. Heat oven to 375°F. In medium bowl, stir cookie mix, flour, melted butter and egg until soft dough forms.
  2. On floured surface, roll dough 1/4 inch thick. Cut with 3- to 3 1/4-inch egg-shaped cookie cutter; place cutouts 2 inches apart on ungreased cookie sheets.
  3. Bake 7 to 9 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 20 minutes.
  4. In 3 separate small bowls, divide frosting and tint two of them separately with pink and yellow food colors, leaving the third bowl white. With small icing knife or offset metal spatula, spread 1 tablespoon of frosting on top of cookie.
  5. Using photo as a guide, decorate frosted cookie with cookie icing, sprinkles and sugars. Repeat for frosting and decorating remaining cookies. Let stand about 1 hour or until icing is set. Store covered in airtight container at room temperature with waxed paper between layers.

Recipe Tips

  • For more color options: Place 5 tablespoons frosting in each of 5 small bowls, and tint 4 of them separately with pink, blue, yellow and green pastel food colors, leaving the remaining bowl white.
  • Decorate the cookies with sprinkles and sugars immediately after frosting or icing so they stick.
  • Cookies turn out best when baked one sheet at a time on the middle oven rack.
  • For best results and control with cookie icing, start by cutting a small tip off end to pipe onto cookie tops. If needed, cut more from end to get desired look.
  • Have the whole family get in on the fun! Make it a guessing game of who-decorated-which-egg, a decorating awards ceremony (everyone wins when the prize is a cookie!), or an Easter egg cookie swap to encourage sharing.
